Happy Tasty Tuesday! Oh goodness, do I have a yummy, stuff your tummy recipe for you. A recipe like this needs a long scrumptious name, Mascarpone Stuffed Brioche French Toast with Berry Compote. Let me tell you what, this was amazing. I usually don’t toot my own horn, but I have to admit I was proud of myself for this one.
Do you want to make an elegant brunch for family, lady friends, or heck, just for yourself? If so, this is the perfect way to give it a go! You will look like a full blow foodie, with high class ingredients but low maintenance prep.
French toast- brioche bread, egg wash (2 eggs, 1 tsp vanilla, a pinch of salt, and 1/2 cup milk)
Mascarpone mixture- 1 tub of mascarpone cheese, 1 tsp vanilla or 1/2 a vanilla bean (scrapped), 1 tbsp organic sugar, 1 tsp fresh squeezed lemon. Though, I did not follow a recipe to make this I did see a William Sonoma recipe that added lemon into the mascarpone cheese mix. Otherwise, this recipe is traditionally how I make french toast.
Compote- 1 cup of berries (I used strawberries, raspberries, wild blueberries, 1/2 cup of sugar) I also used 2 tbsp of lingonberries. If you have an Ikea close, go grab you a jar! If not you make be able to find them in your international aisle at the grocery store.
Garnish- zest of an orange, drizzle of grade A dark maple syrup (not necessary but they sure make it special!)
Find a shallow bowl or dish and prepare your egg wash. With a wisk mix the 2 eggs, vanilla extract, pinch of salt, and milk until well blended. Set aside until your sandwiches are ready.
In a separate bowl, mix together your mascarpone, sugar, fresh lemon, and vanilla until whipped.
In a sauce pan, put your berries and sugar onto a medium heat burner. Let them bubble until the berries have softened, then mash them a little( you could totally add Chia seeds at this point).
The take your brioche bread slices and smear on the cheese mixture, then top with another slice of brioche.
Prepare a large pan on a medium heat, drop a tsp of real salted butter onto the pan and let it heat until it bubbles, but don’t let it brown!
Dip your sandwich (each side) into to egg wash and then put it directly on the pan until it browns, then flip it.
Once you take them out of the pan, let them cool for a few minutes then top with your compote. Drizzle with maple and zest an orange over it. Ta da! A classy and delish brunch!
